Blackened Crappie on the Blackstone!

What do you do with all of the fish you caught? You blacken them!

This recipe is not exclusive to a Blackstone. You can use any pan or griddle that you have available. If you have fresh fish or some that has been frozen be sure to pat the filets dry. Once the filet is dry, pick our your favorite cajun seasoning. Sprinkle the seasoning on the fish liberally. 

Now its time to turn on the flat top. I like to cook on a medium heat. Once the flattop or skillet is to temperature, its time to add some oil and butter. 

Place all of the filets on the grill for 2-3 minutes depending on the size of the filet. Its important to remember that fish cooks fast. Do not leave the fish unattended. After flipping the fish let the filet cook until the internal temp hits 145 degrees. 

Be sure to plate the fish with rice or cheese grits, and a vegetable.
